PROCESSING AND DISTILLATION:
The marc of Pinot Grigio variety arrives fresh and softly pressed in the distillery. Once the delicate
fermentation phase is complete, it is immediately distilled in the traditional discontinuous bain-marie still.
The Grappa obtained is then left to refine for 85 months in Scottish casks of the island of Islay.
PROPERTIES:
Islay Cask Grappa is fresh on the nose, with slightly floral and woody notes. The taste is pleasantly
persistent, with a peaty note resulting from the particularity of Scottish wood.
TASTING:
We recommend to taste it fresh, at around 16 °C. Store it in a cool dark place.
